We serve what nature and our region, Val d'Ega, have to offer: fresh vegetables, tasty cheeses, homemade dumplings, wild herbs from the surrounding area and, of course, some classic South Tyrolean desserts.
We cook authentically, seasonally and with lots of love: a hearty breakfast in the morning, a substantial menu in the evening. Vegetarian? No problem.
Our goal: to make you feel comfortable and satisfied, simply enjoying our mountain hut in Obereggen.
Recipe for our guests
Pressed dumplings
Ingredients for 4 servings
- 150 g dumpling bread
- 15 g South Tyrolean butter
- 25 g onion
- Garlic
- 100 g South Tyrolean mountain cheese
- 50 g Puster Valley grey cheese
- 50 g Gorgonzola
- 3 eggs
- 100 ml South Tyrolean milk
- 15 g flour or breadcrumbs
- Salt, pepper
- Chives, parsley
- Melted brown butter and grated Parmesan cheese
Preparation time: 45 minutes
- Peel the onion and garlic, sauté in butter and add to the dumpling bread.
- Finely dice or crumble the mountain cheese, grey cheese and Gorgonzola and mix into the breadcrumbs.
- Gently heat the milk and add to the mixture with plenty of chopped herbs.
- Finally, add the eggs, season, mix and stir in flour or breadcrumbs if necessary. Then leave to stand for at least 30 minutes.
- Form patties from the dumpling mixture and fry slowly on both sides in a little oil until golden brown.
- Simmer the fried patties in salted water for 10 minutes. Serve the pressed dumplings and garnish with Parmesan, browned butter and chives.
